A 1-cup serving of raw spinach or 1/2 cup cooked provides over 50 percent of the daily value for folate and vitamin C. At the same time, a serving of this nonstarchy vegetable is super low in calories (7) and carbohydrate (1 gram). A ½-cup cooked serving contains just 22 calories and 4 grams of carb.

For me, it was all about my blood glucose, specifically my fasting numbers. Recent evidence reported by John Hopkins University suggests that consumption of dairy products by sensitive children causes the immune cells to respond with excessive aggressiveness to antigens in cow’s milk. These antigens may attach themselves to cells in the pancreas. Once attached, the antigens are attacked by immune cells that, in the process, destroy both the antigens and the pancreatic cells that produce insulin. Most people who have type I diabetes develop this disorder before age 30.
Vitamin D will help, but it won’t do the job all by itself! You’ll still need to eliminate sugars, carbs, processed foods as well as eat organic, fresh fruits and veggies often. Some people with diabetes need to eat at about the same time each day. Others can be more flexible with the timing of their meals. Depending on your diabetes medicines or type of insulin, you may need to eat the same amount of carbohydrates at the same time each day. If you take “mealtime” insulin, your eating schedule can be more flexible.
