Recent evidence reported by John Hopkins University suggests that consumption of dairy products by sensitive children causes the immune cells to respond with excessive aggressiveness to antigens in cow’s milk. These antigens may attach themselves to cells in the pancreas. Once attached, the antigens are attacked by immune cells that, in the process, destroy both the antigens and the pancreatic cells that produce insulin. Most people who have type I diabetes develop this disorder before age 30.
Bean tostada: Bake 1 corn tortilla in 400-degree oven until crisp. Spread with ½ c cooked or canned pinto beans (rinsed) and 2 Tbsp shredded reduced-fat Mexican blend cheese. The amount and type of these exchanges are based on a number of factors, including the daily exercise program, timing of insulin injections, and whether or not an individual needs to lose weight or reduce cholesterol or blood pressure levels.
Basically, they act as “endocrine disruptors” to our body. This means that they alter the way our bodies respond to its own regulatory hormones. Ironically enough, the cosmetics that we use to look more alluring, attractive or even healthy do a lot of work to block our more “natural hormonal cosmetics”: testosterone and estrogen.
Some people with diabetes need to eat at about the same time each day. Others can be more flexible with the timing of their meals. Depending on your diabetes medicines or type of insulin, you may need to eat the same amount of carbohydrates at the same time each day. If you take “mealtime” insulin, your eating schedule can be more flexible.

Opt for recipes with variety. Try to get a variety of vegetables on your plate, such as dark leafy greens, beets, artichokes, onions, carrots, and cucumbers. Add cooked chickpeas, avocado, brown rice, baked sweet potato, hemp seeds, extra-virgin olive oil, and other foods rich in protein, fiber, and fat. Better yet, look for recipes that combine a variety of plant-based ingredients like Sweet Potato and Red Cabbage Slaw.
