While sugar may play a necessary role in some baked goods because of chemical reactions that result in the proper texture, rising, et cetera, quick breads are a wonderful category of sweets for which the complete substitution of a low-calorie sweetener such as Splenda is not only completely acceptable from a baking standpoint, but for taste as well.

Animal-based food products contain cholesterol. High amounts occur in meat, dairy products, egg yolks, and shellfish. (Plant foods, such as fruits, vegetables, nuts, and grains, do not contain cholesterol.) The American Heart Association recommends no more than 300 mg of dietary cholesterol per day for the general population and no more than 200 mg daily for those with high cholesterol or heart disease.
Milk and Substitutes. The milk and substitutes list is categorized by fat content similar to the meat list. A milk exchange is usually 1 cup or 8 ounces. Those who are on weight-loss or low-cholesterol diets should follow the skim and very low-fat milk lists — while avoiding the whole milk group. Others should use the whole milk list very sparingly. All people with diabetes should avoid artificially sweetened milks.
Diabetes is not typically one of these things. We know “what leads” to type 2 diabetes, but it’s not all set in stone. Cinnamon is an excellent spice which is well-known for maintaining glucose level and improving insulin sensitivity in type II diabetic patients as stated in a study published in the ‘Proceedings of the Nutrition Society’ journal. It was found that after taking the Cr supplementation (a compound present in cinnamon); glucose, insulin, cholesterol and HbA1c levels were all improved in subjects with type II diabetes.

Richard K. Bernstein is critical of the standard American Diabetes Association diet plan.
