“Good” fats. Foods containing monounsaturated and polyunsaturated fats can help lower your cholesterol levels. These include avocados, almonds, pecans, walnuts, olives, and canola, olive and peanut oils. But don’t overdo it, as all fats are high in calories.

Scoop tuna onto 2 c mixed dark greens, and top with 1 Tbsp chopped almonds. Serve with 1 oz 100% whole grain crackers.

There may just be something to that old line, “Beans, beans, the magical fruit.” Of course, you probably know that beans are high in fiber and a good source of protein, but now there are even more reasons to include them in a diabetic diet. In a 2012 study, researchers found that eating about a cup of legumes daily resulted in better blood sugar control (for both blood glucose and A1C) and lower blood pressure.

Research at the American Diabetes Association conference and published in Diabetologia demonstrated that people who go on a very low calorie diet can remove fat which is clogging up the pancreas allowing normal insulin secretion to be restored.

Further, consuming more fiber may lower the risk of a first-time stroke, according to the American Heart Association (AHA) journal Stroke. The researchers concluded that every 7-gram increase in total dietary fiber was associated with a 7 percent lower risk of a first-time stroke.

Fiber is an important component of many complex carbohydrates. It is found only in plant foods such as vegetables, fruits, whole grains, nuts, and legumes (dried beans, peanuts, and peas). Fiber cannot be digested. Instead, it passes through the intestines, drawing water with it, and is eliminated as part of feces content. The following are specific advantages from high-fiber diets (up to 50 grams a day):

Type 1 diabetes is commonly called “juvenile diabetes” because it tends to develop at a younger age, typically before a person turns 20 years old. Type 1 diabetes is an autoimmune disease where the immune system attacks the insulin-producing beta cells in the pancreas. The damage to the pancreatic cells leads to a reduced ability or complete inability to create insulin. The soluble fiber in oatmeal might also help blunt the rise in blood glucose by delaying stomach emptying and providing a physical barrier to digestive enzymes and absorptive surfaces, according to the professional publication Today’s Dietitian.

Alpha lipoic acid (ALA): protects the liver from potentially harmful cell changes and assists it in flushing toxins from the body. ALA is effective in minimizing liver toxicity following exposure to poisons such as heavy metals (including lead) and toxic industrial chemicals such as carbon tetrachloride. Food sources: spinach, broccoli, Brewer’s yeast, Brussel sprouts, rice bran, and organ meats.
