Like spinach, kale is one of those green leafy veggies associated with a reduced risk of type 2 diabetes. In one meta-analysis of several studies, people who ate the most green leafy vegetables were 14 percent less likely to develop diabetes than those consuming the least amounts.
Regardless of the form, soy products have a deserved reputation for providing high-quality protein that is low in saturated fat and cholesterol. In fact, soy is a great way to help meet the 2010 Dietary Guidelines for Americans recommendation to “replace protein foods that are high in solids fats (such as many meats) with choices that are lower in solid fats and calories.”

Those of us with type two diabetes are like the canaries in the mines, they fall first, and hardest from eating the food that is on every street corner, in all our supermarkets and regrettably sold in our schools.
Just because you’re avoiding sugar doesn’t mean you need to completely eliminate carbs. Dinner is when you can add another whole-grain to your diet (unless you’re gluten-free). Whole-wheat pasta, couscous, or sweet potatoes are fine. If you are gluten-free, try cauliflower rice, spaghetti squash, or my favorite gluten-free pasta (made from brown rice… did I mention it’s my favorite?). FYI: diabetes detox of cooked pasta is considered a serving.

It has really helped me to get to a place I have been aiming for…I am just finishing up this detox/ cleanse and wanted to give some feed back. First, I loved the ease of the menu items. I have come to realize that eating right takes time and thought. You have to be prepared. So I made a shopping list and actually sent my hubby to the store! I love the morning tea. I have only recently started drinking tea and have acquired an affinity for the green tea with jasmine. The lemon adds a little zing that I enjoy just that much more! I made the soup first and then the quinoa salad with balsamic dressing. Both were better than I could have hoped for. I did not experience hunger pangs or cravings that first day and was super excited to hit the gym and still be going strong by the time I picked the kids up from school around 4 pm. I usually want a nap from 2-4 pm. I have been reading others’ posts and it seems I am an anomaly in that the first night I experienced a pretty significant bout of insomnia. I finally fell into a fitful rest around 4 am. Tried a different smoothie the second day and it too is something I will use over and over again. The lack of sleep didn’t seem to affect me all that much throughout the day and into the evening. I didn’t have as much trouble falling asleep but could have easily stayed up later. And today, here it is almost 11pm and I am still up…heading to bed shortly though. I feel great and wanted to thank you again! I am actually thinking about staying away from gluten and meat and most dairy for a bit longer. Blessing to you and your family for a fantastic 2013!
